I have been to Tulum three times. The food and service there is truly wonderful, and at the same level of any international city including New York, London or Hong Kong. Unfortunately, ARCA broke that mold and delivered a thoroughly uninspired dining experience. My experience was that ACRA seemed more focused on presentation than the food itself. While very pretty, the tuna ceviche was bland, the pig ragout was dry and lacked flavor, and the portion sizes were so small that my wife and I ate a second meal after 6 expensive tapas. The customer service was also lacking. We were prevented from making any changes to the items on the menu, including ordering a salad with the dressing on the side to allow my wife with a dairy allergy to eat the only green vegetable-based item on the menu. It felt as though our wishes as the customer were subjugated to the artistic expression of a chef who has rested on the laurels of his pedigree at Noma rather than delivering high quality food and service. I recommend avoiding ARCA. There are too many incredible and unpretentious restaurants, that focus on the food and the customer experience, to waste one of the precious few vacation dinners in Tulum at ARCA.
